This Imperial Stout was aged for up to seven months in Willett bourbon and Pinot barrels, with vanilla beans added during cold conditioning, resulting in a decadent cornucopia of flavors and aromas – including dark chocolate, vanilla and licorice – with bourbon soaked dark fruit and tobacco undertones. 10.4% ABV / 44 IBU

Double Dunk’n Punk’n Ale 2023

View Description

Brewed with local pie pumpkins, allspice, clove, cinnamon, ginger, nutmeg and orange peel in the boil. Then we aged it in Westward Whiskey oak barrels with vanilla beans for 8 months. This dark amber strong ale serves up a bounty of flavor and aroma. Vanilla, oak, winter spice and pumpkin aromas rise from the glass supported by a full-bodied malty core and a long, spicy, rich, warming finish. 14.9% ABV / 27 IBU

This beer was brewed in salute to the people, places, and beers that inspired us to brew something different. Brewed using a double mash and only the super sweet first wort runnings followed by a very long boil, this beer has a depth and complexity rarely found. Huge flavors and aromas of vanilla and oak from the barrels, chocolate and caramel from the massive malt bill with a touch of peat smoke on the finish. A complex combination of sweetness, alcohol, and bitterness round this beer out to really be something special; the perfect tribute.

Pumpkin Smash 2022

View Description

Pumpkin Smash 2022 is a blend of quad ales aged in bourbon, rum and nocino (green walnut liqueur) barrels for up to 22 months with roast pumpkin, butternut squash and spices. Made with pumpkins grown on Portland’s Sauvie Island, this Northwest sour ale features robust pumpkin and spice flavors ending with a rich, warming finish. We bring in over 600 pounds of whole Cinderella pumpkins to be hand cut, oven-roasted and added directly to the barrels. We then infuse the beer with a variety of traditional pumpkin spices including cinnamon, nutmeg, allspice and clove – just enough to complement the character of the pumpkin. This limited project is ready to drink now, but will age well if stored in a cool, dark place, so enjoy Pumpkin Smash this fall or anytime throughout the year. 11.1% ABV

This extremely limited edition of Kentucky Peach is a single oak version of a Cascade classic. We started with a blend of barrel aged sour blond, triple, and golden ales, refermented with fresh Pacific Northwest-grown peaches. After fermentation, we re-racked it into a bourbon barrel with vanilla beans and aged it for an additional 6 months.

Where There’s a Willett

View Description

For this stout we did a double mash and only collected the super sweet first wort. An extended boil, generous additions of demerara sugar in the boil make it the “biggest” beer we have ever produced here at Cascade. To finish it off it spent 9 months in Willett bourbon barrels with vanilla beans. Dark, rich, and sweet, it’s the perfect beer for dessert. 12.4% ABV / 42 IBU
