The 2016 Blueberry project is a blend of sour wheat and blond ales that were aged in white wine barrels for up to 12 months with more than 8,000 pounds of fresh blueberries. The 2016 growing season delivered fruit with elegant blueberry aromatics, providing clean fruit expression to this blend, complemented by the dry, cereal grain notes of the beer with hints of lemon, violets, a soft oak presence and lively acidity. 8.5% ABV

VINTAGE 2013 ELDERBERRY $26

This NW style sour ale is a blend of red ales aged for up to two years in oak barrels on elderberries and spices. Aromas of sharp, dark port, raisins, black currants and hints of red peppercorns are the first to be noticed. Tart, dark fruit, blackberries, currants, tobacco and hints of leather on the palate lead to a slightly drying finish of sweet elderberries, dark grapes, aged port and leather. 8.2% ABV

This amazing Northwest sour is a blend of wheat and blond ales aged in oak wine barrels for up to 18 months with black and red raspberries, fresh ginger and thyme. This unique project offers carefully layered flavors of ripe bramble fruit with a refreshing ginger lift and soft notes of lavender and pine. 6.6% ABV

Noyaux (pronounced noy-OH) is a blend of sour Blond ales aged in white wine barrels for up to 24 months with fresh raspberries and apricot noyaux. Offering a complex bouquet of raspberry fruit, rose petals, toasted almonds and soft perfume notes, the 2014 Noyaux is ready to drink now, but will reward cellaring in a cool, dark place for several years. 9.29% ABV

SANG DU CHENE 2015 $20

Sang du Chene, meaning blood of the oak, showcases sour strong blond and triple ales aged in three large format oak casks: foudres, puncheons and hogsheads. Oak influences are the highlight of the Sang du Chene, providing flavors of toasted sugars, vanilla and spice complemented by the bright acidity and fruity character of the beer. 9.6% ABV

Sang Noir is a blend of imperial red ales aged in bourbon and wine barrels for up to two years with Bing Cherries. The darkest in our series of ‘Sang’ projects, Sang Noir features notes of dark roast malts, bourbon, black cherries, and port wine. 10.1% ABV

Sang Rouge is a blend of sour red ales aged in select red wine barrels and oak puncheons for up to 24 months. Highlighting the depth and complexity of our base red ale without the influence of additional fruits or spices, Sang Rouge serves as the foundation of our “Sang” series. This rare project features notes of roasted malts, dried currants, aged red wine and toasted oak. 7.8% ABV

Sang Royal is a blend of double red ales aged in oak barrels, foudres and puncheons for up to 22 months with Pinot Noir grapes from Oregon’s famed Willamette Valley wine region. The most sophisticated in Cascade’s series of “Sang” projects, Sang Royal captures complex notes of summer berry fruit, plum, cola, earth and spice, with a vibrant acidity and soft tannic structure 9.4% ABV

CHÊNE DES FOUS 2018 $12

Made in collaboration with our friends at Burial Beer Company in Asheville, NC, Chêne des Fous (shen de-FOO), meaning “Oak of the Fools,” is a blend of sour triple ales aged for up to 18 months in French oak barrels with dried sumac, fresh apricots and toasted American oak chains. Intense oak flavors are met with savory lemon and dried fruit notes from the sumac and a subtle stone fruit aroma. 8.4% ABV

Coastal Gose 2018 $12

Few places embody the wild spirit of the Pacific Northwest like the Oregon Coast. To help protect this venerated landscape, we’ve partnered with the Portland Chapter of the Surfrider Foundation on our Coastal Gose blend. This interpretation of the historic Gose beer features sour wheat ales aged in oak barrels with ground coriander seed and sea salt harvested from Oregon’s coastal waters. By donating a portion of the profits from each bottle sold, we are committed to helping the Portland Surfrider Chapter protect and preserve the world’s oceans, waves and beaches––one beer at a time. 7.3% ABV

Cocoa Cardamom 2018 $12

Cocoa Cardamom is a blend of sour blond ales aged in oak wine barrels and foudres for up to two years followed by late infusions of Dutch cocoa powder, cardamom seeds and fresh orange zest. From notes of dark chocolate to bright citrus fruit and fragrant cardamom, this limited release captures a remarkably complex spectrum of flavors that belie the simple golden hue of this limited-release project. 9.8% ABV

CUVÉE DU JONGLEUR $12

Originally released in 2008, Cuvée du Jongleur, or “Blend of the Juggler,” consists of select red, triple and quad sour ales aged in oak barrels for up to three years. Making its first appearance in over a decade, the 2017 project pays homage to the original blend, juggling a variety of base beers that offer clean and complex flavors through the lactic fermentation process that has come to define our Northwest Sour Ales. 9.4% ABV

Garden Party is a blend of sour blond and wheat ales aged in white wine barrels for up to two years with Willamette Valley-grown chardonnay grapes followed by a late infusion of fresh Meyer lemon zest and dried elderflowers. The perfect beverage for any outdoor soirée, Garden Party delivers the sparkle of champagne, the floral delicacy of elderflowers and the brilliance of sweet lemon zest—bringing refinement and refreshment to your party, wherever it may be. 9.8% ABV

Harvest Graff 2018 $12

To celebrate the harvest season, we are excited to offer our
interpretation of “graff,” a relatively obscure beer-cider hyrbrid.
Harvest Graff is a blend of sour blond and red ales aged in wine
and bourbon barrels for up to two years, then naturally fermented
with raw juice from Northwest-grown apples and lightly infused
with a blend of spices. 8.8% ABV

Mayan Bourbonic 2017 - $14

A variation of our Bourbonic Plague blend, Mayan Bourbonic features sour imperial porter aged in Bourbon and wine barrels with dates for up to two years, then infused with Peruvian cocoa powder, Ceylon cinnamon and cayenne pepper. Inspired by the traditional drink of the ancient Mayan civilization, Mayan Bourbonic delivers notes of bitter chocolate, Bourbon and cinnamon with a mild cayenne spice and delicate carbonation level. 11.3%

NW Flanders 2018 $12

A tribute to the historic Flanders Red Ales of West Belgium (and a reference to the vibrant NW Flanders Street in downtown Portland), Northwest Flanders is our interpretation of the classic sour beer style that has inspired so many brewers around the world. A blend of sour red ales aged for over two years in oak barrels and foudres, Northwest Flanders captures notes of plum, currant, raisin, fig and spice with hints of oak and roasted malt. 7.6% ABV

ONE WAY OR ANOTHER 2017 $12

Based on a collaboration recipe originally designed with our friends at Bruery Terreux®, the 2017 One Way Or Another combines whole, Northwest-grown marionberries and Meyer lemon zest with sour blond ale aged in oak barrels for up to 16 months. The finished blend captures notes of blackberry pastry, fresh citrus and spruce tips with a lively acidity and dry finish. 7.7% ABV

PRIMORDIAL NOIR 2017 $14

Primordial Noir is a blend of imperial red ales aged in bourbon and wine barrels for up to two years with Northwest-grown Bing cherries and spices. A concentrated precursor to our Sang Noir project, Primordial Noir features a more robust bourbon and cherry presence with notes of roast malt, molasses and baking spices. 10.5% ABV

Roadside Chai 2018 $12

Roadside Chai features sour red ale aged in oak wine barrels and foudres for up to two years then infused with our own masala chai spice blend. Like the traditional masala chai (meaning “spiced tea”) served from road side stalls across India, this limited release offers flavors of black tea, cinnamon, clove, peppercorns, cardamom, ginger and vanilla complemented by the roasty, dark fruit notes of the base beer. 8.5% ABV

ROSE CITY SOUR 2017 $12

Celebrating Portland’s reputation as the City of Roses, we are pleased to offer Rose City Sour, a blend of wheat and blond ales aged in oak wine barrels for up to 14 months with rose petals, rose hips and hibiscus flowers. Rose City Sour captures the delicate floral aromas of fresh roses matched with notes of dried cranberries, pomegranates and a hint of white pepper. 8% ABV

SANG DU CHÊNE 2017 $12

Celebrating Northwest regional offerings of craft beer and wine, Valley Flora combines our sour red ale with Willamette Valley-grown Pinot Noir grapes using traditional brewing and winemaking techniques. Through native fruit fermentation and extended oak maturation, Valley Flora expresses notes of dark bramble fruit, plum, cherry, earth and oak supported by a balanced tannic structure and lively acidity. 10% ABV

VLAD THE IMP ALER 2017 $14

Behold the return of Vlad the Imp Aler, one of the most iconic projects in our 20-year history of brewing and blending sour beer. A combination of quad and blond ales aged in bourbon and wine barrels for up to two years with orange peel and coriander, Vlad delivers a fresh acidity and light malt sweetness with notes of bourbon, citrus and spice. 11.6% ABV
